Poems & Quotations

November comes
And November goes,
With the last red berries
And the first white snows.

With night coming early,
And dawn coming late,
And ice in the bucket
And frost by the gate.

The fires burn
And the kettles sing,
And earth sinks to rest
Until next spring.

- Clyde Watson

I am rich today with autumn's gold,
All that my covetous hands can hold;

Frost-painted leaves and goldenrod,
A goldfinch on a milkweed pod,
Huge golden pumpkins in the field
With heaps of corn from a bounteous yield,
Golden apples heavy on the trees
Rivaling those of Hesperides,
Golden rays of balmy sunshine spread
Over all like butter on warm bread;
And the harvest moon will this night unfold
The streams running full of molten gold.
Oh, who could find a dearth of bliss
With autumn glory such as this!

- Gladys Harp

Suet Recipes: For the Birds & Other Small Animals

Here's a fun project the whole family can enjoy.  Not only will you have fun fixing up these tasty treats, but you will get to enjoy the wild life that stops by all winter long.  Materials will vary according to the recipe you choose and your choice of container for the suet mix.  Before you begin, it's a good idea to see what you have available as a container.  See the following list of suggestions:

* Large pot used to melt suet
* Large mixing bowl to combine ingredients
* Heavy twine if hanging suet from a tree branch
* A nylon mesh onion bag is another way to hang suet.
* Roll the suet into small balls and simply throw them in the yard.
* Stuff pine cones and hang from tree branches using twine.
* Any size baking pan to use as a mold - lined with plastic wrap or tin foil.  The suet will be cut into squares or slices and hung from a branch using an onion bag.
* Smear soft suet mixtures directly on tree trunks.

SUET

Suet is available at most grocery stores or at a butcher shop or you can trim excess fat off beef cuts and store it in the freezer until you have enough fat for your recipe.

To prepare you suet:
1. Finely chop the fat or grind it with a meat grinder.
2. Heat the fat over a low flame until it is liquefied.
3. Strain the liquid through a fine cheesecloth.
4. Cool to harden.
5. REPEAT STEPS 2 & 3.
6. Let suet cool to harden and then store it in a covered container in the freezer.

When your ready to prepare your recipe:
Melt suet over low flame.  Stir in ingredients.  Pour into baking pan, roll into balls, or stuff pine cones (**see note).  Refrigerate until hardened or store in the freezer.

*Note: when using peanut butter I prefer Teddy Natural - this contains no salt or preservatives - just peanuts.

**Note: to prepare pine cones - line a cookie sheet with tin foil and place the pine cones on the foil.  Heat them in the oven at no more than 250 degrees until the cones begin to dry and open up.
